Coca Cola Braised Short Ribs & BBQ Demi Glace. Using left-over braised short ribs or pot roast to build this quick and easy meat pie. Use a pre-made puff pastry dough (Pillsbury) to simplify matters even further.
Coca Cola Short Ribs
4.5#- Braised Beef Short Ribs (cubes or scraps, defrosted)
1 cup- Soy Sauce
2 cups- Worcestershire Sauce
8 cups- Coca Cola
4 cups- Demi Glace
1 cup- Water
1 Tblsp- Sweet Paprika
1 tea- Cumin
½ tea- Cayenne Pepper
2 Tblsp- Garlic (chopped)
7oz- Spanish Onion (small dice)
1.Add all ingredients into 5 quart Sauce Pot.
2.Bring to a boil, reduce heat to simmer, and cook. (20 minutes)
3.Remove from heat and allow to cool in liquid. (30 minutes)
4.Separate all the liquid from the beef using a large holed strainer.
5.Save all liquid to make the BBQ Demi-Glace (see recipe below)
6.Shred all the beef and cool.
10 cups- Liquid from recipe above
7 Tblsp- Cornstarch (slurry)
7 Tblsp- Cold Water (slurry)
1. Bring the liquid to a boil.
2. Temper the slurry and whisk until thick.
3. Remove from heat, strain through a fine mesh strainer
How to Build the Pie
4 sheets- Pillsbury Puff Pastry (frozen)
2 Quarts- Coca Cola Shredded Beef
1 cup- Coca Cola Demi-Glace
4 cups- Mozzarella Cheese (shred)
1 ½ each- Red Onion (sliced thin)
8 Tblsp- Sweet Baby Rays Citrus Chipolte BBQ Sauce
4 Tblsp- Olive Oil
2 each- Eggs (whipped, eeg wash)
Enough to coat- Sweet Paprika
1.Heat oven to 400°.
2.Allow puff pastry to defrost for 10 minutes at room temperature.
3.Line two half sheet trays with parchment paper.
4.Place one layer of puff pastry onto each tray.
5.Drizzle with Olive oil
6.Bake for 3 minutes on 400°, remove and allow to cool.
7.Drizzle base layer of puff pastry with BBQ sauce.
8.Add the Shredded Beef.
9.Then all the Mozzarella Cheese.
10.Top with the Red Onion slices.
11.Place second layer of puff pastry dough on top.
12.Egg wash, dust with paprika, and drizzle with remaining BBQ sauce.
13.Bake on 400° for 6-8 minutes or until golden brown and fully risen.
